Pear and chocolate pudding, cooked in a mug, just for you. Delicious.
30g dark chocolate (at least 70% cocoa solids)
20g unsalted butter and a little extra for greasing
2 tbsp light brown sugar
2 tbsp self-raising flour
½ a small pear, peeled, cored and cut into 1cm pieces
A little icing sugar for dusting
Vanilla ice-cream to serve
Put the chocolate and butter in a heatproof bowl. Microwave for 45 seconds and stir until melted. Beat the egg and add it to the chocolate mixture along with the brown sugar and self-raising flour. Mix until combined. Butter the base of a microwave-proof mug and put the pieces of pear in the bottom. Top with the cake mixture. Put the mug in the microwave and cook for 2(ish) mins until risen.
Leave to rest for half a minute, then turn out into a bowl, dust with icing sugar and top with a ball of ice-cream.
