Recipe for Homemade Custard

Homemade custard is good for the soul, and excellent with Christmas pudding. 


  • 400ml Cows Milk

  • 1 Vanilla Pod

  • 3 Egg Yolks

  • 65g Caster Sugar

  • 30g Cornflour

  • 300ml Double Cream


  • Pour cream into a saucepan and gently heat it, stirring it with a wooden spoon, taking care not to let it bubble or boil.

  • Whisk the egg yolks, sugar and cornflour mixture and the vanilla in a medium bowl.

  • Gradually add the hot cream to the bowl, continuing to whisk the mixture.

  • When mixed, add it back to the saucepan using a spatula to remove it all from the bowl.

  • Gently heat and whisk up the custard until it is thick and smooth.

  • If it starts to look grainy, it is likely you are overheating so just transfer it into a bowl off the heat and whisk until smooth again and warm over a pan of simmering water before serving.
