Delicious dips and sides. You can't beat a fresh tomato salsa with homemade tortilla chips or a creamy potato salad to tuck into on your picnic blanket. Here are a couple of great (and quick) homemade picnic recipes to pack up and bring along...
Fresh Pico de Gallo
Ingredients:
- 4 medium fresh tomatoes, diced
- 1/2 medium red onion, diced
- 1 jalapeño pepper with seeds removed and sliced
- Juice of 1 lime
- 1 pinch dried oregano
- 1 pinch ground cumin
Stir all the ingredients together in a medium bowl along with some seasoning and put it into the fridge to chill. Note: It's best to do this the day before your picnic.
Radish and Cucumber Potato Salad
Ingredients:
- 1kg of potatoes, boiled and cut into chunks
- 2 tbsp chives, finely chopped
- 2 tbsp Italian parsley, finely chopped
- 1/2 a cucumbers, diced
- 5-6 radishes, thinly sliced
Dressing
- 100ml of mayonnaise
- 2 tbsp olive oil
- 1 tbsp Dyjon mustard
- Pinch of salt
- Ground pepper, to taste
Once your cooked and chopped potatoes are completely cooled put them into a large mixing bowl with the chives, parsley, cucumbers and radishes.
In a small bowl whisk all dressing ingredients together. Pour the dressing over the salad and gently mix through.
Garnish with extra chives, parsley and radishes - enjoy!
